Order Up! Commercial Kitchen Incubator Marks Opening

El Pajaro Community Development Corp. unveiled its long-awaited facility Monday.





A commercial kitchen incubator has opened on Riverside Drive after two decades of dreaming and two years of construction.

A project of El Pajaro Community Development Corp., the commercial kitchen program will provide space and resources for upstart food vendors, small family operations and farmers seeking to transform their crops into value-added products.

The new kitchen space includes 10 workstations and a hot food line. Small companies—such as a catering operation or a family-run bakery—can utilize the facility as they need. The project has been highly anticipated.

El Pajaro CDC unveiled the facility—a refurbished tofu factory near Watsonville High School—with an event Monday.
