Beans and Peas Please

Green beans, snap peas and shell peas abound.

Now that the milder weather is upon us, quick-growing green beans, snap peas and the like are filling the bins and booths at the Watsonville Certified Farmers Market.

Green beans can be eaten with their pods still on. Steamed, blanched, or sautéed, these tasty beans make a healthy side to any lunch or dinner dish. Stop by Universal Farm's booth to pick some up.

Snap and shell peas are also big producers during this season. Sweet and crisp, snap peas can be eaten raw, pod and all. Snacking on snap peas is a great way to satisfy that crunch craving in a way that won’t leave you feeling guilty later. Snap peas are also perfect in stir frys and sautees.

The pods of shell peas are a bit tougher than the other beans and peas mentioned here. These peas need to be hulled. Make an activity out of it by filling a big bag with shell peas and recruiting the whole family to get in on the shelling. Kids will love it! Snap and shell peas can be found at Agular Farm's booth.

This week, also keep an eye out for zucchini and yellow squash, asparagus, and baby spring mix.

Seasame Green Beans

Adapted from the South Beach Cook Book

Whisk together soy sauce, oil, and garlic in a large bowl.

Boil a pot of salted water. Add beans and cook for about 2 minutes. Remove beans and run under cold water for 30 seconds. Add beans to soy sauce mixture. Sprinkle with red pepper flakes to add a little spicy flair.
