Energizing Edibles at the Farmers Market

Seasonal fruits, veggies and honey make a delicious combo.

This week, while perusing the produce at the Watsonville Certified Farmers Market, be sure to bring along this crisp and energizing salad recipe that includes many seasonal market favorites:  beets, apples, carrots and cabbage.

  • 1 raw beet, grated
  • 1 carrot, grated
  • 1 apple, grated
  • ½ cup cabbage, finely sliced
  • 2 tbsp sunflower seeds
  • A small handful of dried fruit
  • 2 tsp olive oil
  • 1 tbsp fresh squeezed lemon
  • 1tsp honey

Combine the grated beet, carrot, apple, and cabbage in a bowl. Mix in sunflower seeds and dried fruit.

In a separate bowl, mix the olive oil, lemon juice and honey together until well blended. Pour mixture over salad and toss.

This crisp and vibrant salad packs a nutritious punch. The colorful combination is great for your immune system and promotes good digestion. Best of all, almost every ingredient in this salad can be found at the Watsonville Certified Farmers Market, right down to the local honey, harvested by Paul Riggs.

Pick up a tub of creamy hummus and pita bread from Zena Foods in the market’s prepared food section, to pair with Energy! Energy! salad. Bake up some potatoes from Rio de Parra Organics for a perfect Friday evening meal.

Shopping at the farmers market is a wonderful way to connect with your community, support local farmers, and eat seasonally.
